When we decided to do a round of Whole30, I immediately went to Pinterest for inspiration! I stumbled across these Buffalo Chicken Meatballs and added them to our meal plan for the first week!
This recipe will not disappoint!
Recipe adapted from Physical Kitchness
1 pound ground chicken
2 green onions, chopped
¼ cup Frank’s Red Hot sauce
2 tablespoons dump ranch ( I used this recipe and it is FANTASTIC)
½ teaspoon salt
¼ cup + 2 tablespoons almond flour
How to make:
Preheat oven to 400 degrees
Mix ground chicken, green onions, hot sauce, egg, dump ranch, salt, and almond flour in a large bowl.
Using a cookie scoop or small spoon, dish out the ground chicken mixture and mold into balls (this will be easiest with a cookie scoop).
Place the meatballs on a parchment-lined baking sheet or cast iron skillet. I used a lined baking sheet.
Bake for 20 minutes then drizzle with more hot sauce.
We served these with roasted veggies and then I used leftovers on a salad and they were delicious! But guess who didn’t take a picture of the final product….oops!
