Are you ready for one of the quickest and probably most simple recipes you’ll ever have? Did I mention that it is AMAZINGLY DELICIOUS?
This past weekend when I was meal planning, I noticed that Publix had their Caesar Salad kits on sale for $2.50. I grabbed one (and by grab- I mean hit select on the Shipt app! BEST THING EVER) I knew that I had chicken tenderloins in the freezer, so I was thinking I could could get Bill to grill them and it would be a quick and easy weeknight supper.
I didn’t have anything in mind for a marinade, so on a whim I threw this together and wrote it down and measured it out JUST in case it was good. It was better than good, it was delicious. Even both girls ate it and loved it! If you know my girls, then you know that means something!
Easiest, Most Delicious Chicken Marinade
2 tablespoons Olive Oil
3 tablespoons Red Wine Vinegar
1 teaspoon Whole Black Peppercorns
A few sprigs of Rosemary
Salt to taste- I used Pink Himalayan Sea Salt
1 teaspoon Garlic
Lemon Juice- I used a dash of some I had in the fridge.
I mixed it all up in a bowl that I could stick in the fridge and marinate the chicken in. I found this stir in garlic that works perfect for these types of things and is also just nice to have on hand. I had taken out a pack of chicken and threw it in the marinade when it was all mixed together. After the chicken was in the marinade, I put the lid on the bowl and mixed it up and threw it in the fridge for a couple of hours!
Bill threw the chicken on the grill for me! While he did that, I used part of the salad kit and made us a salad! I ditched the romaine for spinach and added some cucumbers from our garden. I also added some bacon and parmesan cheese!
Let me tell you friends, the end result did NOT disappoint! This is a keeper for sure!
